Whether we like it or not, menus do need to be updated at least seasonally. If you're unsure what you should keep and what you should replace, let the data be your guide. As a general rule of thumb, eliminate the bottom 20% of menu items (the menu items with the least number of sales). If you have a 20 item menu, this means you will replace 4 dishes. This will help keep your menu fresh while keeping your best sellers available to your membership.
